Zucchini Bread and Butter Pickles

Pickling mixtures that work for cucumbers will work for zucchini, though the texture of zucchini pickles is somewhat less crisp. For this, I particularly recommend adding Pickle Crisp (see Crisping Agents, page 22) to each jar.

Ingredients

12 cups thinly sliced small zucchini or other summer squash

* * *

2 onions, thinly sliced

* * *

ΒΌ cup pickling or fine sea salt

* * *

4 cups cider vinegar
